This cake recipe was so good, so quick, and so easy, that I had to share it!
Using Pamela’s Gluten Free Vanilla Cake Mix, Simply Delish, and lots of coconut milk and oil, you’ll get a healthier version than a lot of the cakes out there. You’ll also get a wonderful treat for you and your family on Valentine’s Day!
I used two 8″ round pans to bake this cake, and just whipped up some cream and garnished with some fresh strawberries for the topping. A couple of heart-shaped cake pans, and a cream cheese frosting would have fit the bill just perfectly, but I went with simplicity.

• 1 Package of Pamela’s Vanilla Gluten Free Cake Mix
• 1/2 Cup coconut milk
• 1 Cup coconut oil, melted
• 1 Package of Simply Delish natural jel dessert
• 4 Eggs
• 1 1/2 cups of fresh or frozen strawberries, smashed in a blender
Preheat the oven to 325 degrees. Grease the cake pans. Blend fresh or frozen strawberries in a blender until smooth. Add all of the ingredients to the mixing bowl and beat on low speed until just blended. Scrape the sides of the bowl and blend on medium speed for 4 minutes.
Pour the batter into the prepared pans, and bake for 40-45 minutes or until a toothpick comes out clean. Allow to cool, then remove the cake from the pans.
